Lumpia (Spring Rolls)

After a long summer vacation at home (Indonesia), now....I´m back to Germany,  back to the reality, become a family chef again :). This Ramadan, I´ve really enjoy Fasting in two different countries, two weeks in my home country and the rest in Hamburg despite of the time difference. In Germany, bringing fasts for about 18 hours a day for 30 days, during this summer time. Since Islam´s lunar calendar shift Ramadan 10 days every year, therefore muslims this year will experience longer days of fasting. However, when we do fasting with ´Niat´ only for Allah, Insya Allah it wouldn´t be difficult as we think.

The Holy month of Ramadan is also a good time for family and friends gathered together to break the fast. My family is used to break the fast with something sweet : dates, lukewarm Jasmine Tea, some salty or sweet snacks as appetizers , followed by a regular dinner later on after Sholat Magreb. Additional prayers, Taraweh, are prescribed  after dinner.

Today, I´d like to share with you Spring rolls or Lumpia in Bahasa Indonesia, rolled appetizer, that can be filled with only vegetables or mixed of poultry/meat with vegetables.

Lumpia/spring rolls
ingredients:
40 ready made spring roll pastry
filling:
500 g chicken breast fillet, chopped 
100 g shrimps, chopped
2 carrots, julienned
300 - 400 g bamboos shoots, julienned  ( or you can use also potatos, vermicelli)
1 onion, chopped
5 clove of garlics, chopped
1 teaspoon ground white pepper
salt
6 tablespoons cooking oil
cooking oil for frying.

directions: 
  • Filling : heat a wok, saute onion and garlics until fragrant, then add chicken, shrimps. After few minutes, add carrots, bamboos shoots. Season with salt and pepper.
  • Spoons two tablespoons of filling into spring roll wrapped
  • Fry spring rolls until golden brown.
